Vecchia Dispensa Apple Saba

Saba - the Northern name for the liquid which is called Mosto Cotto in Southern Italy - is a wonderful ingredient for the keen cook. La Vecchia Dispensa’s Saba is made from the cooked must or juice of local apples (not grapes or quinces, which is also common). Delicious over ice-cream, to sweeten sauces or to give a mysterious complexity to stews.
