Made from the dried fruits of the Sumac plant, Sumac is a wonderfully tangy, lemony spice. It is widely used in Mediterranean and Middle-Eastern cookery, and makes an interesting alternative to lemon juice on fish or in salads. Chef Yotam Ottolenghi suggests a delicious marinade for chicken made with oil, garlic, cinnamon, paprika, allspice and sumac: pour over the chicken and leave in the fridge for 24 hours before roasting. Serve the fragrant meat with rice and your choice of vegetables.
