Hera nei Campi: Riso Ebano

Ebano is a black rice, that maintains its wonderfully
rich colour once cooked. It has been bred to have a
very low demand for water and grows exceptionally
well in the Napoli countryside. It is deliciously nutty
and while still being suitable for making risottos, is
perfect to use in a rice salad or for making sushi.
