To make this unusual oil, CastelaS have returned to the typical practices of the oil producers of the Vallée des Baux, in which the olives are stored for a time after harvesting and before pressing to allow some fermentation, thus producing an oil with strong flavours of black olives. Technically this is a fault, so the oil has to be classed as virgin, not extra virgin. It has been a great hit with chefs across the world as a unique and delicious ingredient. Use with new potatoes or fish.
Tasting Notes:
Sweet and well-rounded, with pungent aromas of black olives and some vanilla and mushroom undertones. No piquancy or bitterness.
