Over the centuries the Valdueza family have been creating the finest olive oils, wines and vinegar on their estates.
In 2007 they began their latest experiment, to create a balsamic condimento using their grapes. They placed the overripe Syrah, Cabernet Sauvingon and Merlot grapes into the old French oak barrels made with wood from the Allier, Troncais and Bertrange forest. Over the last 15 years this grape must has sat in a dark cool corner in their winery and its flavour has developed. This sweet dark liquid has been blended with Marques de Valdueza Red Wine Vinegar to create this amazing product, the perfect balance between sweet and sharp.
Visually, we observe a brilliant, rosewood color vinegar, with golden hazelnut tones.
The nose reveals a powerful aroma full of light fig and raisin notes, with a harmonic assemblage of the toasted hues of the caramelized must and the wood of the French oak barrels.
Lightly sweet from the must, the vinegar leaves, together with its acidity, a rounded flavor, with an aftertaste where toastiness, caramel and raisin combine.
