Vecchia Dispensa Saba
Saba - the Northern name for the liquid which is called Mosto Cotto in Southern Italy - is a wonderful ingredient for the keen cook. La Vecchia Dispensa’s Saba is made from the cooked must or juice of local apples (not quinces, which is also common). Delicious over ice-cream, to sweeten sauces or to give a mysterious complexity to stews.
