The Oil Merchant's Guide to Choosing an Olive Oil

1.  AROMAS & FLAVOURS
Often, before our morning coffee, the team here at OM HQ will gather around to taste the latest olive oil sample that has landed on our doorstep.
We consider the aromas and flavours and try to find the words to use to describe them. We also consider how balanced an oil is, how the aromas on the nose follow through to flavour in the mouth and finally to the finish.  

2. ORIGIN
The terroir, climate and local style will all have an influence over the oil. We like to find out as much as possible about the land each of our oils come from. We are always keen to consider oils from regions that we do not yet represent. 

3. FARMING PRACTICES
We remember that olive oil is an agricultural product. We look for suppliers who are farmers rather than commodity brokers. Olive trees are long term crops and how they are treated now will have an impact on the oil they produce for years to come. Producers must be guardians of their land. We will not list an oil until we understand the farms’ working practices and their commitment to a sustainable future. 

4. OLIVE VARIETIES
There are about 150 regularly cultivated olive varieties for eating and making oil and each olive brings its own distinct character to an oil.
Some producers grow many different olive varieties and expertly blend the oils each year to reach a flavour profile that represents their farm. Others produce single varietal oils that really show off the flavour profile of that one olive.

5. DESIGN
About 75% of customers say that packaging influences their decision as to whether to buy a product or not. This is even more important with products like olive oil where not many customers can taste before they buy. We look carefully at the design and quality of the packaging, how well it informs the consumer, and of course, the legalities of the labelling. 

6. PRICE
It is important to us that producers are fairly supported and that their work is financially sustainable.  At the same time, we need ensure that the oils can be listed at a fair price for the retailer and the consumer. 

7. USP
Once we are satisfied with the points above, it is often the story behind the product and the producer that helps to persuade us to add it to our list.
