Organic Apple Saba
Saba is a wonderful ingredient for a keen cook. It is the Northern Italian name for the Mosto Cotto in Southern Italy. The cooked must from local apples, instead of grapes from which balsamic vinegar is made. It is delicious over ice-cream or to give a mysterious complexity to stews.
It can also be spooned over panna cotta or drizzled over hard or soft cheeses.
