
Chiavalon Croatian Organic Extra Virgin Olive Oil 500ml
The Chiavalon family cultivate 9,000 olive trees on their 30 hectare estate near the medieval town of Vodnjan in Istria County. Istria in Croatia is one of the world’s northern most olive tree growing regions. The land here is permeated with calcaric stone and unique soil which holds water in the hot summer months, keeping the trees from drying out. Brothers Sandi and Tedi have led the expansion of the family olive oil production. The majority of the olive varieties they grow are native to Croatia. All of their oils are Protected Designation of Origin. While all of the olives are grown to organic standards, not all of the oils have organic certification.
This particular blend of olive oil is actually fully certified as Organic. It is a blend of five local olive varieties - Buza, Carbonazza, Istrian Bianchera, Rosignola and Morasola. It was harvested in October 2022 and possesses an intense green colour with a very rich texture. It is highly recommended served with grilled tuna, red meats as well as pasta and risotto dishes.
Tasting Notes
There are fresh aromas of cut grass and green apple as well as herbaceous notes of mint, rosemary and sage. The flavours are profound with a wonderfully delicate balance of spice and bitterness.
