Jean-Benoit harvests his olives young, and presses them very carefully within hours of picking, to produce a herbaceous, vibrant oil that hums with the flavours of fresh fruit, herbs and spices.
The Castelines AOP classic extra virgin olive oil has a fresh and uplifting aroma of mown grass, raw globe artichokes and green cooking-apple peel. At the front of the mouth the oil is soft and rounded; notes of hay make way for a chicory-like bitterness and a spicy green-chilli finish. A long aftertaste, reminiscent of cos lettuce.
