Armatore Colatura Anchovy Extract
At the forefront of Armatore’s mission is sustainability. They are selective about their fishing techniques; they will not source from overexploited stocks, they support the local fishing community and ensure their packaging is fully recyclable or biodegradable. The paper that they use is approved by the FSC indicating that it comes from wood from responsibly managed forests. Their packaging, as well as aesthetically interesting is designed to inform the consumer, allowing them to make the sustainable and informed choice.
Anchovy Colatura is a delicious preparation that comes from a centuries-old tradition. The anchovies are caught during the spring off the Amalfi Coast, only by the Cetara fishing boats, and are processed within a few hours of being captured. They are then eviscerated and placed inside a chestnut barrel, layered with sea salt, where they are left for 18-30 months.
