A L'Olivier Regional Extra Virgin Olive Oil—Vallee des Baux A.O.C. 250ml

In 2001 A L'Olivier launched a range of oils in tins and bottles to reflect their founder's philosophy of quality and style, called the 1822 Collection. The first in the range are these AOC extra virgin olive oils, selected from different regions across France. Reflecting their founder’s quest for quality and good provenance, AOC oils are made according to the specific guidelines of a certain area, which regulates olive varieties used and how the oil is made. The whole process, from tree to bottle, must take place within the AOC area. 

This Vallee des Baux oil has a toasty aroma and rich, nutty flavour, combined with some uplifting citrus notes and a very well balanced and long finish. Nice bitter leaves on the finish make this a very well-balanced oil. Use with nutty grains such as pearl barley or with A L'Oliver's Fig Vinegar as a dressing for a cold duck salad.
