The olives from the Frescobaldi‚Äôs groves are harvested by hand and pressed in the family mill, after which some of the oil is stored in terracotta glazed vases and the rest in stainless steel tanks (which these days have largely taken over from the traditional terracotta). Bottled in the distinctive faceted bottle chosen by the Laudemio Consorzio (which sets rules to guarantee provenance and quality) the oil is then boxed to keep it out of the light on the shop shelves.
The oil has a multi-layered aroma, with notes of dark chocolate, sweet meadow grass and coffee detectable. The oil has a full and creamy texture, with some sweet notes of ripe banana on the palate while flavours of walnut skins add a pleasant bitterness. Extremely well balanced, the oil develops a nice spicy green peppercorn taste as you swallow which lasts extremely long in the mouth.
This year is the 30th anniversary of the founding of the Laudemio Consorzio, and to commemorate the occasion Frescobaldi have released their oil in a special edition gold bottle.¬†
